Both the models have Hazard Analysis Critical Control Points with (HACCP) programs which are designed to detect unsafe food conditions. The HACCP guidelines are recommended by the FDA for food service professionals and commercial institutions to help detect unsafe food conditions. These HACCP programs incorporate the optimum temperature at which a food product should be stored, cooked, or cooled, as well as the length of time that food products can safely remain at these temperatures.
